Spring/Summer 2020: our cooking workshops are still suspended due to the official protocols on required distance. All the other activities: winery, oil farm and farm to table experiences as well as our walks and hiking are available according to the Government protocols

Our Cooking&Culinary workshops are designed for those who are passionate about good food and eating well: making Umbrian pasta tagliatelle and pappardelle, pizza al testo, the traditional flat bread stuffed with tasty pork meat, soups by local renowned legumes like lentils from Castelluccio di Norcia, Fagiolina del Trasimeno and other typical beans.

All the recipes proposed are part of the daily Umbrian cooking, tasty and simple to make and re-make at your home: an unforgettable “souvenir” of Italy to impress your friends!

HALF DAY WORKSHOPS + WINE TASTING + INTRODUCTION TO OLIVE OIL

Each workshop includes the preparation and the tasting of the dishes made by the participants in pairing with two Umbrian wines +  an overview on the use of olive oil in Umbrian and Central Italy culinary tradition. Our Cooking Experiences are conducted by local cooks in cooperation with us. Guided wine tasting led by the Discovering Umbria Team.

  • Individual and Small Group Private Cooking Classes: from 2 - 4 participants to max. 8 - 10 people. Our aim is to offer the best authentic and intimate experience to our guests. Private workshops with no extra costs in 2020-21.
  • Private Cooking Classes for Small Private Groups of max. 10 - 12 participants part of the same club, family or group of friends also available on request.
  • Pasta in Villa: easy cooking workshops directly at your villa/countryhouse in Todi and surroundings (min. 6 people)
  • Our Culinary workshops and Cooking Classes are held in English and located in Todi area (near Perugia).

Making pappardelle and tagliatelle, traditional hand-made pasta by flour and eggs and their sauces based on seasonal ingredients.
Demo on how to make lasagna and ravioli (stuffed pasta) and other formats.

Making of different traditional soups: lentils, chickpeas and fava beans. Preparation of Pizza al Testo simple version (Umbrian flat bread with flour and water)

Workshop on two of the most iconic Italian dishes: a first course, Spaghetti alla Carbonara and a second course, Polpette di Carne (meat balls), starting from the history and myths around these two legendary recipes.

THE PIZZA KIDS

Special workshop only for the little chefs! Making Pizza al Testo, the Umbrian flat bread in two different versions and the iconic Focaccia or Pizza Romana. Easy and involving workshop for families with young kids and teens.

◊ NEW! BACK TO THE ORIGINS: THE CUISINE OF THE ANCIENT ROMANS

Discover Italy's archaic food tradition going back to the Roman times! Our workshop includes the preparation of the garum, the famous fish sauce, the libum, bread with ricotta and bay leaves, and a dish based on seasonal legumes, basic ingredient in Romans' diet. Making of two kinds of wines with spices. All the recipes proposed come from ancient culinary essays.

PORK & PIZZA AL TESTO: BE UMBRIAN!

Making Pizza al Testo, the Umbrian flat bread in two different versions + traditional cooking on the fireplace (grilling with oak and olive tree wood) of pork sausages and bacon to stuff our breads.

BEING NORCINO: CURED MEAT WORKSHOP  ◊ SPECIAL

Preparation of sausages, salami, capocollo, strutto (lard used in cooking) and all the other pork based Umbrian specialities. starting from "mezzena" half a pig (from head to tail!).
Available from min. 6 participants (6 people booking together)
Suitable only for real meat lovers

Notes on the ingredients used: in our culinary workshops, we use standard wheat flour [farina di grano duro] containing gluten [no gluten free]. Eggs are also widely used. It is not possible for us to replace these two basic ingredients. If you have a very light food intolerance or simply you don't like any food/ingredient, please let us know and we'll try to replace it.  Thanks!
