DO YOU KNOW WHAT “COPPA” IS??
If you look up in the dictionary the word “coppa” you will probably find: cup, trophy,glass, bowl…etc.

In Umbria “coppa” is a very special product of our “norcineria” (specialist salami and pork production).
“Coppa” is a cooked sausage produced with the less noble parts of the pig, rich in cartilagen and collagen. Head, ears,snout and pig-skins are boiled for about three hours, then the bones are picked and the meat is salted and spiced with ground pepper, cinnamon, nutmeg and orange peel. The mixture is pressed with hands, sacked and boiled. After cooling for a night, it is ready to send to the table.
